FLAVOURED SUGARS

Making your own flavoured sugars is as easy as heading for your spice cupboard! Using things you already have on hand, you can flavour them any way you like! Stir into your tea or coffee, dust cookies or desserts, sprinkle over fruit – let your imagination run wild!

There are so many varieties/combinations of flavoured sugars.  My favorite is lilac sugar. Lilacs do not keep their fragrance when dried so this is a perfect way to use them. To do this is very simple. below is my recipe. 

INGREDIENTS 

  • Sugar

  • Fresh Lilac petals

HOW TO

  • Place a layer of sugar in a jar. I use a 500g jar & add about 1cm of sugar.

  • Then layer fresh lilac flowers and repeat until the jar is full.

  • Leave a small gap between the top of the jar and the lid.

  • Shake it every day for a week. This helps the sugar coat the flowers.

  • After a week sieve the mixture.

  • Because of the moisture in the flowers I spred the sugar on a tray lined with greaseproof paper on the countertop for about 4 hours until its dried (you can also do this in an oven that's been preheated & turned off for about 15 mins but I had the oven too hot and burnt it) I then put the sugar in my coffee grinder to make it fine and store in an airtight jar.

You can use the sugar in baking, to make a lilac syrup and teas. The leftover flowers can be used to decorate cakes etc. but they won't store well.
